Preparation
In a large mixing bowl, combine the mini marshmallows, diced pineapple, mandarin oranges, and shredded coconut.
In a separate bowl, mix the sour cream (or Greek yogurt) and vanilla extract until smooth.
Gently fold the sour cream mixture into the fruit and marshmallow mixture until well combined.
Add the chopped nuts if using, and mix gently again.
Refrigerate for at least one hour before serving to allow the flavors to meld.
Serving
Serve cold. Scoop into bowls or a large serving dish, and garnish with extra coconut or whole mandarin segments.

Notes
Cover the salad with plastic wrap or put it in an airtight container and keep it in the refrigerator for 2–3 days. The marshmallows will soften over time, so serve within a day or two for the best texture. Add nuts just before serving for crunch.
