Method
Preparation
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
Cream the butter and sugars in a bowl until light and fluffy.
Add the egg, vanilla extract, and apple cider; mix until smooth.
In another bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
Add the dry ingredients to the wet ingredients and mix until combined.
Fold in the diced apples gently with a spatula.
Baking
Scoop the dough onto the prepared baking sheet.
Bake for 10–12 minutes, until edges are set but centers stay soft.
Let cookies cool on the sheet for a few minutes, then move to a wire rack.
Glazing
Mix powdered sugar with 1–2 tbsp of apple cider to make a thin glaze.
Drizzle the glaze over cooled cookies.
Notes
Serve warm or at room temperature. These cookies pair well with tea, coffee, or milk. Store in an airtight container for up to 3 days at room temperature or up to 1 week in the refrigerator. Freeze baked cookies for up to 3 months.
