Ingredients

For the Cookies
  • 1 cup unsalted butter (softened)
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/4 cup apple cider
  • 1 tsp vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1 cup diced apples Use firm, crisp apples
For the Glaze
  • 1/2 cup powdered sugar
  • 1–2 tbsp apple cider Adjust for glaze thickness

Method

Preparation
  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream the butter and sugars in a bowl until light and fluffy.
  3. Add the egg, vanilla extract, and apple cider; mix until smooth.
  4. In another bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
  5. Add the dry ingredients to the wet ingredients and mix until combined.
  6. Fold in the diced apples gently with a spatula.
Baking
  1. Scoop the dough onto the prepared baking sheet.
  2. Bake for 10–12 minutes, until edges are set but centers stay soft.
  3. Let cookies cool on the sheet for a few minutes, then move to a wire rack.
Glazing
  1. Mix powdered sugar with 1–2 tbsp of apple cider to make a thin glaze.
  2. Drizzle the glaze over cooled cookies.

Notes
