  • 2 cups cooked shredded chicken
  • 1/2 cup barbecue sauce
  • 2 cups shredded cheddar cheese
Quesadilla Assembly
  • 4 large flour tortillas
  • 1/4 cup chopped green onions (optional) For garnish
  • 2 tablespoons olive oil

Method

Preparation
  1. In a bowl, combine shredded chicken and barbecue sauce until well coated.
  2. Heat 1 tablespoon olive oil in a large skillet over medium heat.
Cooking
  1. Place one tortilla in the skillet, sprinkle with 1/2 cup shredded cheese, spread 1/2 cup BBQ chicken mixture evenly over the cheese, then top with another 1/2 cup shredded cheese.
  2. Cover with a second tortilla and cook for 3-4 minutes until the bottom tortilla is golden and the cheese begins to melt.
  3. Carefully flip the quesadilla and cook another 3-4 minutes until golden and cheese is fully melted.
  4. Remove from skillet and repeat with remaining tortillas and filling.
Serving
  1. Slice into wedges, garnish with chopped green onions if desired, and serve warm.

Notes

Use hot cooked chicken or warm it with the sauce first for faster cheese melting. Press down lightly with a spatula while cooking for even browning. Use medium heat to avoid burning the tortillas. Swap cheddar for Monterey Jack for a milder melt.
