  • 1 tablespoon ground cinnamon

Method

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the eggs and vanilla extract.
  4. In another bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
  5. Gradually mix the dry ingredients into the wet ingredients until just combined. Do not overmix.
  6. Drop rounded tablespoons of dough onto a lined baking sheet, leaving space between cookies.
Baking
  1. Bake for 10-12 minutes or until the edges are lightly golden.
  2. Let cookies cool on the baking sheet for a few minutes before transferring to a wire rack.
Icing (optional)
  1. If desired, mix powdered sugar with a little water to create an icing and drizzle over cooled cookies.
