Method

Preparation
  1. Slice the oranges into 1/4 inch thick rounds.
  2. In a medium saucepan, combine the sugar and water. Bring to a simmer over medium heat, stirring until the sugar dissolves.
  3. Add the orange slices to the syrup and reduce the heat to low. Simmer for about 45 minutes until the slices become translucent.
  4. Remove the slices from the syrup and place them on a wire rack to cool.
  5. Optional: Once cool, sprinkle the slices with a little additional sugar for extra sweetness.
  6. Let them dry for a few hours before serving or storing.

Notes

Use thin, even slices so they cook evenly. Keep the syrup at a low simmer to avoid breaking the slices. Turn slices gently in the syrup so both sides candy. Dry them on a wire rack to let air circulate. If syrup gets too thick, add a little water and warm gently.
