Method
Preparation
In a mixing bowl, combine the olive oil, red wine vinegar, oregano, salt, and pepper. Mix well to create a marinade.
Add the sliced chicken to the marinade, ensuring it’s well coated. Allow it to marinate for at least 30 minutes.
Cooking
Preheat your grill or heat a pan over medium-high heat. Cook the marinated chicken until fully cooked, about 5-7 minutes per side, or until the internal temperature reaches 165°F.
While the chicken is cooking, warm the pita bread either on the grill for a minute or in the microwave for about 10-15 seconds.
Assembly
Assemble your gyros by placing a generous amount of the grilled chicken onto each warm pita.
Top with diced tomatoes, shredded lettuce, and thinly sliced red onion.
Finish off each gyro with a generous dollop of tzatziki sauce, then roll up the pita for easy eating.
Leftover chicken can be stored in the refrigerator for up to 3 days. Reheat in a pan over low heat or in the microwave. Store fresh vegetables separately for the best texture.
