Chicken gyros are a delicious take on a Greek classic, featuring marinated chicken and fresh vegetables wrapped in warm pita bread.

Ingredients

For the marinade
  • 2 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
Main ingredients
  • 1 lb chicken breast, sliced Can substitute with turkey breast or pork.
  • Pita bread For wrapping the gyros.
  • 1 cup diced tomatoes
  • 1 cup shredded lettuce
  • 1/2 red onion, thinly sliced
  • 1 cup tzatziki sauce Can be spiced with garlic or fresh dill.

Method

Preparation
  1. In a mixing bowl, combine the olive oil, red wine vinegar, oregano, salt, and pepper. Mix well to create a marinade.
  2. Add the sliced chicken to the marinade, ensuring it’s well coated. Allow it to marinate for at least 30 minutes.
Cooking
  1. Preheat your grill or heat a pan over medium-high heat. Cook the marinated chicken until fully cooked, about 5-7 minutes per side, or until the internal temperature reaches 165°F.
  2. While the chicken is cooking, warm the pita bread either on the grill for a minute or in the microwave for about 10-15 seconds.
Assembly
  1. Assemble your gyros by placing a generous amount of the grilled chicken onto each warm pita.
  2. Top with diced tomatoes, shredded lettuce, and thinly sliced red onion.
  3. Finish off each gyro with a generous dollop of tzatziki sauce, then roll up the pita for easy eating.

Notes

Leftover chicken can be stored in the refrigerator for up to 3 days. Reheat in a pan over low heat or in the microwave. Store fresh vegetables separately for the best texture.
