Preparation
Cook the ramen noodles according to package instructions, then drain and set aside.
In a large skillet or wok, heat sesame oil over medium heat.
Add the minced garlic and grated ginger, cooking until fragrant, about 1 minute.
Cooking
Add the sliced chicken breast to the skillet and cook until browned and cooked through, about 5-7 minutes.
Stir in the mixed vegetables and cook until tender, about 3-4 minutes.
Add the cooked ramen noodles to the skillet along with soy sauce, salt, and pepper.
Toss everything together to combine and heat through for an additional 2-3 minutes.
Serve hot, garnished with sliced green onions.
Notes
Don't overcook the noodles and prep everything in advance for a swift cooking process. Cooking on high heat will help achieve that delightful stir-fry speed.
