Method
Preparation
Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking pan.
In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
Gradually add in the flour and salt, mixing until the dough forms.
Press 2/3 of the dough into the bottom of the prepared baking pan to create the crust.
Filling and Baking
In another bowl, combine cranberries, brown sugar, lemon juice, and vanilla extract for the filling. Spread this mixture over the crust.
Crumble the remaining dough over the cranberry layer.
Bake for about 25-30 minutes, or until the top is golden brown.
Finishing
Allow to cool completely before frosting with a glaze made from powdered sugar, milk, and vanilla.
Cut into bars and serve.
Notes
Store in an airtight container at room temperature for up to three days or in the refrigerator for about a week. They can be frozen for up to three months.
