Ingredients

For the crust
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
For the filling
  • 1 cup fresh or frozen cranberries Use fresh for the best flavor.
  • 1/2 cup brown sugar Add more for a sweeter bar.
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
For the glaze
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract (for glaze)

Method

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking pan.
  2. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Gradually add in the flour and salt, mixing until the dough forms.
  4. Press 2/3 of the dough into the bottom of the prepared baking pan to create the crust.
Filling and Baking
  1. In another bowl, combine cranberries, brown sugar, lemon juice, and vanilla extract for the filling. Spread this mixture over the crust.
  2. Crumble the remaining dough over the cranberry layer.
  3. Bake for about 25-30 minutes, or until the top is golden brown.
Finishing
  1. Allow to cool completely before frosting with a glaze made from powdered sugar, milk, and vanilla.
  2. Cut into bars and serve.

Notes

Store in an airtight container at room temperature for up to three days or in the refrigerator for about a week. They can be frozen for up to three months.
