Method

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Cut the salmon into bite-sized pieces.
  3. In a bowl, season flour with salt and pepper. In another bowl, beat an egg. In a third bowl, place panko breadcrumbs.
  4. Dredge each salmon piece in flour, dip in egg, and then coat with panko breadcrumbs.
  5. Place the salmon bites on a baking sheet lined with parchment paper.
  6. Bake for 12-15 minutes or until golden and crispy.
Sauce Preparation
  1. In a small bowl, mix mayonnaise, sweet chili sauce, and sriracha to create the Bang Bang sauce.
