Method

Preparation
  1. In a skillet, brown the ground beef over medium heat until fully cooked. Drain excess fat if desired.
  2. Add the taco seasoning and the water as directed on the seasoning packet. Stir to combine and simmer until the sauce thickens (about 2–3 minutes).
  3. Warm corn tortillas in a separate pan or on a griddle for about 15–30 seconds per side until pliable and slightly toasted.
Assembly
  1. Place a scoop of beef mixture on each warm tortilla, top with shredded cheese and drizzle with enchilada sauce.
  2. Fold the tortillas and serve immediately.

Notes
