Preparation
Season chicken with salt and pepper on both sides.
Cooking the Chicken
Heat olive oil in a skillet over medium-high heat.
Add chicken and cook for 5-6 minutes per side until golden and crispy.
Remove from the skillet and set aside.
Making the Creamy Garlic Sauce
Lower heat and add minced garlic to the pan.
Sauté for 30 seconds until fragrant.
Pour in cream, stirring continuously.
Add Italian seasoning and parmesan cheese, mixing until smooth.
If using, stir in chopped spinach and simmer for 2-3 minutes.
Combining and Serving
Return the cooked chicken to the pan, spooning sauce over the top.
Simmer for 1 minute, then remove from heat.
Serve hot with pasta, roasted vegetables, or mashed potatoes.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently in a skillet over low heat to retain creaminess.
