Method
Preparation
Wash fruit well and pat dry.
Preheat the oven to 200°F (95°C). Use the lowest setting if available.
Slice the fruit 1/8 to 1/4 inch (3–6 mm) thick and remove large seeds.
If desired, brush slices with lemon juice or simple syrup and sprinkle with sugar.
Drying
Place a wire rack on a baking sheet and lay the slices in one layer, ensuring they do not touch.
Put the tray in the oven and dry the slices for 2 to 4 hours, checking after 1.5 hours and flipping every 30–60 minutes.
Watch the color and feel. When slices are dry and slightly firm, remove them from the oven.
Let the slices cool on the rack until fully dry and not tacky, which may take 30 to 60 minutes.
If any slices are still soft, return them to the oven for a bit longer.
Store dried slices in an airtight jar or container in a cool, dry place away from sunlight. Slices can last 1 to 3 months. If they get soft, dry them again in the oven.
