Ingredients

Main Ingredients
  • 3 large oranges Choose firm, sweet oranges
  • 1 tablespoon honey Mild flavor
  • 1 teaspoon crushed juniper berries Lightly crushed
  • 1 teaspoon water To thin the honey
  • 1 pinch salt Optional

Method

Preparation
  1. Wash the oranges and dry them.
  2. Preheat oven to 200°F (95°C) or set dehydrator to about 135°F (57°C).
  3. Slice oranges 1/8 to 1/4 inch thick, trying to keep slices even.
  4. Mix honey and water in a small bowl. Brush a thin layer on both sides of each slice.
  5. Sprinkle a tiny amount of crushed juniper on each slice. Use less if you prefer a milder taste.
  6. Place slices on a wire rack over a baking sheet to allow air flow.
Drying
  1. Dry in the oven for 2 to 3 hours, turning slices once after about 90 minutes. In a dehydrator, dry for 6 to 8 hours or until dry.
  2. When slices are dry and no longer sticky, remove and cool on a wire rack.
  3. Let them sit until fully cool; they will firm up as they cool.

Notes

For best results, slice oranges evenly with a mandoline. Use low heat to prevent burning, and check often near the end of drying.
