Method
Preparation
Wash the oranges and dry them.
Preheat oven to 200°F (95°C) or set dehydrator to about 135°F (57°C).
Slice oranges 1/8 to 1/4 inch thick. Try to keep slices even.
Mix honey and water in a small bowl. Brush a thin layer on both sides of each slice.
Sprinkle a tiny amount of crushed juniper on each slice. Use less if you want a mild taste.
Place slices on a wire rack over a baking sheet to allow air flow around each slice.
Drying
Dry in oven for 2 to 3 hours, turning slices once after about 90 minutes. In a dehydrator, dry for 6 to 8 hours or until dry.
When slices are dry and no longer sticky, remove and cool on a wire rack.
Let them sit until fully cool. They will firm up as they cool.
Notes
Store in an airtight container or glass jar. Keep in a cool, dry place away from direct sun. Use silica packets or a small pinch of rice in the jar if your climate is humid. Properly stored, they can last 1 to 3 months.
