Ingredients

For the cookie crust
  • 1 cup brown sugar
  • 1/2 cup butter, softened Make sure it's at room temperature.
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
For the cream cheese layer
  • 8 oz cream cheese, softened Ensure it's softened to mix easily.
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
For the topping
  • assorted fruits fresh fruits (strawberries, kiwi, blueberries, etc.) Customize with your favorite fruits.

Method

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, cream together the brown sugar and butter. Beat in the egg and vanilla.
  3. In another bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture.
Baking
  1. Spread the dough evenly in a greased pizza pan and bake for 12-15 minutes.
  2. Let cool completely.
Assembly
  1. In a separate bowl, combine cream cheese, powdered sugar, and vanilla until smooth.
  2. Spread the cream cheese mixture over the cooled cookie crust.
  3. Top with your favorite fresh fruits.
  4. Chill before serving and enjoy!
