Preparation
In a large skillet over medium heat, brown the ground beef until fully cooked. Drain any excess grease.
Stir in the taco seasoning and cooked rice, mixing well until heated through. Remove from heat.
In a mixing bowl, combine the sour cream, nacho cheese sauce, shredded cheddar, shredded mozzarella, and chipotle sauce. Mix until well blended.
Lay a flour tortilla flat and spoon a generous amount of the beef and rice mixture onto the center.
Add a few spoonfuls of the cheese mixture on top of the beef.
Fold in the sides of the tortilla, then roll it up from the bottom to enclose the filling completely.
In a skillet, heat butter or oil over medium heat. Cook the burrito seam side down for about 2-3 minutes, or until golden brown. Flip and repeat on the other side.
Repeat with the remaining tortillas and filling.
Serve hot, slice in half, and enjoy your cheesy burrito creation!
Ingredient Substitutions: Use ground turkey or a plant-based meat alternative for a lighter option. Swap sour cream with plain yogurt or a dairy-free alternative for a healthier twist.
Optional Variations: Spice it up with diced jalapeños or add black beans for extra protein and fiber.
Storage or Reheating Tips: Store any leftovers in an airtight container in the fridge for up to 3 days. Reheat in a skillet for best results, allowing the cheese to melt again.
