Method

Preparation
  1. In a large pot, heat olive oil over medium heat.
  2. Add the chopped onion, carrots, and celery, sautéing until they are soft, about 5-7 minutes.
  3. Stir in the minced garlic and dried thyme, cooking for an additional 1-2 minutes until fragrant.
  4. Add the white beans and vegetable broth to the pot, bringing it to a simmer.
  5. Cook for 15-20 minutes to allow the flavors to meld.
  6. Season with salt and pepper to taste.
  7. Use an immersion blender to puree the soup to your desired consistency or leave it chunky if preferred.
