Preparation
Preheat your oven to 425°F (220°C).
Wash the potatoes thoroughly, then cut them into wedges. Aim for even sizes to ensure uniform cooking.
In a large mixing bowl, toss the potato wedges with olive oil, minced garlic, salt, black pepper, and Italian seasoning until they are evenly coated.
Baking
Spread the seasoned wedges in a single layer on a baking sheet to allow for even baking.
Bake in the preheated oven for about 25-30 minutes, flipping the wedges halfway through, until they are golden brown and crispy.
Once finished baking, remove from the oven and immediately sprinkle the hot wedges with Parmesan cheese so it melts slightly.
Garnish your potato wedges with chopped fresh parsley for a pop of color and serve them immediately.
Notes
For lighter options, substitute olive oil with cooking spray or your favorite oil blend. For a dairy-free version, use nutritional yeast instead of Parmesan cheese. Optional variations include adding cayenne pepper or lemon zest.
