Method
Preparation
In a mixing bowl, whip the heavy cream until soft peaks form.
In another bowl, combine crushed gingerbread cookies, cooled coffee, sugar, ground ginger, cinnamon, nutmeg, and vanilla extract. Mix until well combined.
Gently fold the whipped cream into the gingerbread mixture until fully incorporated. If using gelatin, dissolve in a small amount of warm water and add to the mixture before folding.
Spoon the mousse mixture into dome molds and refrigerate for at least 4 hours until set.
Serving
Once set, carefully remove the domes from the molds and place on a serving plate.
Drizzle with chocolate or glaze before serving. Enjoy your elegant dessert!
Keep in the fridge in an airtight container for up to 3 days. If you use gelatin, the domes hold shape better. Do not freeze as it can change the mousse texture.
