Method
Preparation
Preheat the oven to 375°F (190°C).
In a bowl, combine 2 cups of all-purpose flour, chilled and diced butter, granulated sugar, and salt. Mix until the mixture resembles coarse crumbs.
Gradually add ice water until the dough comes together.
Divide the dough in half, wrap each half in plastic wrap, and chill for about 30 minutes.
Assembly
Roll out one half of the dough on a floured surface to fit a greased sheet pan (approximately 15x10 inches). Place the rolled dough into the pan.
In a separate bowl, combine the sliced apples with lemon juice, brown sugar, cinnamon, nutmeg, and 1/4 cup all-purpose flour. Toss until well-coated, then spread this apple mixture over the crust in the pan.
Roll out the second half of the dough and place it over the apple filling. Seal the edges by crimping them together.
Baking
Bake for 45-50 minutes, or until the crust is golden and the filling is bubbling.
Allow the pie to cool completely before icing.
Glazing
For the glaze, whisk together powdered sugar, milk, and vanilla extract until smooth, then drizzle over the cooled pie before serving.
