Method

Preparation
  1. Prepare the tzatziki sauce: In a medium bowl, mix the Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, salt, and pepper. Stir until well combined. Refrigerate until ready to use.
  2. Cook the quinoa or brown rice: Follow the package instructions to prepare the quinoa or brown rice. Set aside once cooked.
Cooking
  1. Grill the chicken: Preheat your grill or grill pan over medium heat. Season the chicken breasts with salt and pepper, then grill them for about 6-7 minutes on each side or until fully cooked. Once cooked, slice them thinly.
Assembly
  1. In serving bowls, arrange a base of quinoa or brown rice.
  2. Layer the sliced chicken, diced cucumber, diced bell pepper, thinly sliced red onion, halved cherry tomatoes, sliced Kalamata olives, crumbled feta cheese, and mixed greens.

Notes
