Method
Prepare the Dough
In a bowl, mix warm milk, yeast, and a pinch of sugar. Let sit until foamy (5–10 minutes).
In a large bowl combine flour, sugar, baking powder, and salt.
Add melted butter, egg, red food coloring, and vanilla to the milk mixture.
Stir wet into dry and knead until smooth. Cover and let rise until doubled (about 1 hour).
Prepare the Filling
Mix softened butter, brown sugar, and cinnamon until spreadable.
If you like, stir in mini chocolate chips for extra flavor.
Roll and Assemble
Roll dough on a floured surface into a rectangle about 12x16 inches.
Spread the filling over the dough evenly.
Roll the dough tightly from the long edge into a log.
Cut into 9–12 even rolls and place in a greased baking dish.
Bake the Rolls
Preheat the oven to 350°F (175°C).
Let the rolls rest 15–20 minutes, then bake 20–25 minutes until lightly golden.
Remove from oven and cool slightly.
Make the Frosting
Beat cream cheese and butter until smooth.
Add powdered sugar and vanilla. Add milk 1 tbsp at a time to reach a spreadable consistency.
Frost and Serve
Spread frosting on warm rolls so it melts slightly into the swirls.
Serve warm.
Notes
Use warm, not hot, milk to activate yeast. Let the dough rise in a warm place for a light crumb. Frost while rolls are warm so frosting melts into crevices.
