Ingredients

For the soup base
  • 1 lb ground beef or Italian sausage
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 can (28 oz) crushed tomatoes
  • 4 cups chicken or beef broth
  • 8 oz lasagna noodles, broken into pieces Break the noodles into small pieces so they cook evenly.
  • 1 tablespoon Italian seasoning
  • to taste Salt and pepper Taste and add salt at the end.
For the toppings
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese Try a mix of mozzarella and Parmesan for a sharper flavor.
  • to taste Fresh basil for garnish

Method

Preparation
  1. In a large pot, brown the ground beef or sausage over medium heat, then drain excess fat.
  2. Add chopped onion, garlic, and bell pepper, cooking until softened.
Cooking
  1. Stir in crushed tomatoes, broth, broken lasagna noodles, Italian seasoning, salt, and pepper.
  2. Bring to a boil, then reduce heat and simmer for 20-25 minutes until noodles are tender.
Serving
  1. Serve hot, topped with ricotta, mozzarella, and fresh basil.

Notes

Cool the soup to room temperature and store in an airtight container in the fridge for 3–4 days. Reheat on the stove over low heat until hot. If the noodles soak up too much liquid, add a splash of broth or water when reheating.
