Break the noodles into small pieces so they cook evenly.

Preparation
In a large pot, brown the ground beef or sausage over medium heat, then drain excess fat.
Add chopped onion, garlic, and bell pepper, cooking until softened.
Cooking
Stir in crushed tomatoes, broth, broken lasagna noodles, Italian seasoning, salt, and pepper.
Bring to a boil, then reduce heat and simmer for 20-25 minutes until noodles are tender.
Serving
Serve hot, topped with ricotta, mozzarella, and fresh basil.

Notes
Cool the soup to room temperature and store in an airtight container in the fridge for 3–4 days. Reheat on the stove over low heat until hot. If the noodles soak up too much liquid, add a splash of broth or water when reheating.
