Vegetable Base
  • 4 cups vegetable broth Use homemade for better flavor if possible.
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 large onion, chopped
  • 2 cloves garlic, minced Adjust to taste.
  • 1 cup spinach or kale, chopped
  • 1 teaspoon dried oregano

Method

Preparation
  1. In a large pot, heat a small amount of oil over medium heat.
  2. Add the onion, carrots, and celery, and sauté until they begin to soften, about 5 minutes.
  3. Add the garlic and cook for another minute, until fragrant.
Cooking
  1. Pour in the vegetable broth and bring to a simmer.
  2. Add the spinach or kale and oregano. Season with salt and pepper to taste.
  3. Simmer for 10-15 minutes.
  4. Serve warm with a squeeze of lemon juice for extra flavor.
