  • 1 lb sausage (Italian or breakfast)
  • 4 cups potatoes (diced) Yukon Gold or russets work well.
  • 1 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 4 cups chicken broth Can substitute with vegetable broth for a vegetarian version.
  • 1 cup heavy cream Can replace with half-and-half or non-dairy milk.
  • 1 cup milk Can use low-fat milk for a lighter option.

Method

Preparation
  1. In a large pot, cook the sausage over medium heat until browned. Remove and set aside.
  2. In the same pot, add onion and garlic, cooking until softened.
  3. Add the diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender (about 15 minutes).
Cooking
  1. Stir in the sausage, heavy cream, and milk, simmering for an additional 5 minutes.
  2. Season with salt and pepper.
Serving
  1. Serve hot, garnished with chopped parsley.
  2. This soup goes well with crusty bread or a side salad for a complete meal.

Notes
