Ingredients

For the Meatloaf Base
  • 1 lb ground beef Substitute with ground turkey or chicken for a healthier option.
  • 1/2 cup diced onion
  • 1/2 cup breadcrumbs Use gluten-free breadcrumbs if desired.
  • 1 large egg
  • 1/4 cup milk For meatloaf.
  • 1 tsp salt
  • 1/2 tsp pepper
For the Cheese Sauce
  • 2 tbsp butter
  • 2 cups milk For cheese sauce.
  • 2 tbsp flour
  • 1/2 tsp paprika
  • 1/2 tsp dry mustard
  • 2 cups shredded cheddar cheese Try different cheese types for a flavor twist.
For the Macaroni
  • 2 cups uncooked macaroni

Method

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the ground beef, diced onion, breadcrumbs, egg, 1/4 cup of milk, salt, and pepper. Mix well, ensuring all ingredients are fully incorporated.
  3. Press the meat mixture into a greased baking dish and bake for 20 minutes to set.
  4. While the meatloaf bakes, cook the macaroni according to the package directions. Drain and set aside.
Making the Cheese Sauce
  1. Melt the butter in a saucepan over medium heat.
  2. Stir in the flour and cook for one minute.
  3. Gradually whisk in 2 cups of milk until the mixture thickens.
  4. Season with salt, pepper, paprika, and dry mustard. Stir in the shredded cheese until fully melted and the sauce is smooth.
Assembly
  1. Combine the cooked macaroni with the cheese sauce and pour the mixture over the baked meatloaf.
  2. Top with any remaining cheese.
Final Baking
  1. Bake for an additional 25 minutes, or until the casserole is bubbly and golden on top.
