Cooking
In a large pan, heat olive oil over medium heat.
Add diced chicken breasts and cook until browned, about 5–7 minutes.
Stir in garlic and ginger, and sauté for another minute.
Add bell peppers and pineapple chunks, cooking for 2–3 minutes.
Stir in rice and soy sauce, then add water according to rice package instructions.
Bring to a boil, reduce heat, cover, and simmer until rice is cooked and the liquid is absorbed.
Season with salt and pepper to taste, and garnish with green onions before serving.
Notes
Drain the pineapple well to avoid soggy rice. Brown chicken in a single layer for better flavor. Adjust soy sauce to taste.
