Preparation
Preheat your oven to 375°F (190°C).
Take a tortilla and add a generous portion of shredded chicken followed by a spoonful of enchilada sauce.
Roll the tortilla up tightly and place it seam-side down in a baking dish.
Continue this process with the remaining tortillas until the dish is filled.
Pour any leftover enchilada sauce over the top of the rolled tortillas and sprinkle with shredded cheese.
Bake in the oven for 20-25 minutes, or until the cheese is melted and bubbly.
Serve hot, topped with a dollop of sour cream for extra creaminess. Enjoy!
Tips & Variations: Use shredded beef or beans for a vegetarian option instead of chicken. Optional variations include adding black beans, corn, or diced peppers for extra texture and flavor. Store leftovers in an airtight container in the fridge for up to 3 days. To reheat, place in a preheated oven until warmed through, or microwave for quick reheating.
