Preparation
Preheat the oven to 425°F (220°C).
Peel and chop the sweet potatoes into bite-sized cubes.
In a large bowl, mix the olive oil, maple syrup, salt, black pepper, and cinnamon.
Add the sweet potatoes to the bowl and toss until they are evenly coated.
Cooking
Spread the sweet potatoes on a baking sheet in a single layer.
Roast in the preheated oven for 25-30 minutes, or until tender and caramelized, stirring halfway through.
Remove from the oven and serve warm, garnished with chopped parsley if desired.
