  • 1/4 cup maple syrup
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon cinnamon Optional
  • Chopped parsley For garnish, optional

Method

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. Peel and chop the sweet potatoes into bite-sized cubes.
  3. In a large bowl, mix the olive oil, maple syrup, salt, black pepper, and cinnamon.
  4. Add the sweet potatoes to the bowl and toss until they are evenly coated.
Cooking
  1. Spread the sweet potatoes on a baking sheet in a single layer.
  2. Roast in the preheated oven for 25-30 minutes, or until tender and caramelized, stirring halfway through.
  3. Remove from the oven and serve warm, garnished with chopped parsley if desired.

Notes

Cool the potatoes to room temperature before storing. Store in an airtight container in the fridge for up to 4 days. Reheat in the oven at 350°F (175°C) for 10 minutes or until warm.
