Ingredients

Main ingredients
  • 2 pounds fresh spinach
  • 1 cup heavy cream
  • 1/2 cup cream cheese Use room-temperature for easy melting.
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • Salt and pepper to taste Add salt at the end to avoid over-salting.
  • Nutmeg (optional) Adds warmth to the flavor.

Method

Preparation
  1. In a large pot, bring water to a boil and blanch the spinach for 2-3 minutes until wilted. Drain and rinse with cold water, then squeeze to remove excess moisture.
  2. In a skillet, melt the butter over medium heat and sauté the garlic until fragrant.
Cooking
  1. Add the cream and cream cheese, stirring until combined and smooth.
  2. Stir in the Parmesan cheese and season with salt, pepper, and nutmeg.
  3. Add the cooked spinach and mix until well coated in the sauce.
  4. Cook for an additional 3-5 minutes, until heated through.

Notes
