Ingredients

For the Cookie Base
  • 1 cup unsalted butter, softened Make sure butter is softened for easy mixing.
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 cup chocolate chips Feel free to use different types of chocolate for a unique flavor.
  • 1 cup crushed graham crackers
For the Filling
  • 1 cup marshmallow creme Alternatively, melted regular marshmallows can be used.

Method

Preparation
  1. Preheat your oven to 350°F (175°C). Grease or line a baking dish with parchment paper.
  2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs, one at a time, then stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture until combined.
  5. Stir in the chocolate chips and crushed graham crackers.
Assembly and Baking
  1. Spread half of the dough into the prepared baking dish, smoothing it out evenly.
  2. Spoon the marshmallow creme over the dough, followed by placing pieces of chocolate bars on top.
  3. Spread the remaining dough over the chocolate and marshmallow layer gently.
  4. Bake for about 25-30 minutes, or until golden brown.
  5. Allow to cool before cutting into bars. Enjoy your s'mores cookie bars!

Notes
