Ingredients

Crust
  • 1 package sugar cookie dough Store-bought for convenience
Cheesecake Filling
  • 2 cups cream cheese, softened Use room temperature for best mixing
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs Mix just until combined
  • 1 cup sour cream
  • 1/4 cup all-purpose flour
  • 1 tablespoon lemon juice
  • to taste Sprinkles or toppings of choice Optional for decoration

Method

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Press the sugar cookie dough into the bottom of a 9-inch springform pan to form the crust.
  3. Bake for 10-12 minutes until lightly golden. Allow to cool.
Mixing the Filling
  1. In a large mixing bowl, beat the cream cheese and sugar until smooth.
  2. Add in the vanilla extract, eggs, sour cream, flour, and lemon juice, mixing until well combined.
  3. Pour the cheesecake mixture over the cooled crust.
Baking
  1. Bake for 45-50 minutes or until the center is set.
  2. Turn off the oven, crack the door open, and let the cheesecake cool in the oven for 1 hour.
  3. Remove from the oven and refrigerate for at least 4 hours before serving.
Serving
  1. Top with sprinkles or desired toppings before serving.
  2. Cut the cheesecake with a sharp knife and serve cold.
