Ingredients

For the casserole
  • 2 cups mashed sweet potatoes Smooth mashed for best texture.
  • 1/2 cup sugar Adjust based on sweetness preference.
  • 1/4 cup milk
  • 1/4 cup butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 2 cups mini marshmallows Add marshmallows for browning towards the end.

Method

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the mashed sweet potatoes, sugar, milk, melted butter, vanilla extract, and cinnamon until smooth.
  3. Pour the mixture into a greased baking dish.
  4. Bake for 25 minutes in the preheated oven.
  5. Remove from the oven and evenly spread mini marshmallows on top.
  6. Return to oven and bake for an additional 10 minutes, or until the marshmallows are golden brown.
  7. Serve warm as a side dish.

Notes

Cool the casserole to room temperature before refrigerating. It can be frozen for up to 2 months. For a crunchy top, consider adding chopped pecans with a bit of brown sugar.
