  • 1 lb ground beef or chicken a hearty source of protein
  • 1 packet taco seasoning packed with flavor, this makes for a quick seasoning fix

  • 1 cup black beans, drained and rinsed adds protein and fiber to the dish
  • 1 cup corn, frozen or canned sweet and crunchy for added texture
  • 1 cup diced tomatoes adds freshness and moisture

Method

Cooking Instructions
  1. In a skillet over medium heat, brown the ground beef or chicken until fully cooked.
  2. Add the taco seasoning and a little water as per packet instructions, mixing well.
  3. Stir in the black beans, corn, and diced tomatoes; cook until heated through.
  4. In serving bowls, layer the cooked rice and the taco mixture.

Notes
