Preparation
Preheat your oven to 350°F (175°C).
In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth.
Add the eggs one at a time, mixing well after each addition, and then stir in the vanilla extract.
In another bowl, mix the all-purpose flour, baking soda, and salt.
Gradually add the dry ingredients to the wet mixture, stirring until just combined.
Fold in the semi-sweet chocolate chips, white chocolate chips, and crushed peppermint candies.
Drop rounded tablespoonfuls of dough onto a baking sheet lined with parchment paper, leaving space between each cookie.
Baking
Bake in the preheated oven for 9–12 minutes or until the edges are lightly golden and the centers look set but still soft.
Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
Store cookies in an airtight container. For a festive touch, serve on a decorative plate with extra peppermint pieces on top.
